Recipe History: Back when BofA was The Arizona Bank I bought a recipe book from a work associate who was selling a recipe book put together by her church. The title of the recipe book was "Our Daily Bread.", from the Peoria Presbyterian Church. It had many delicious recipes in it and this one, by far, became the most cooked recipe from that book!
Ingredients:
3 slices bacon, cut up and fried crisp
2 eggs, scrambldin bacon fat
1/4 cup green onions, chopped
2 cups cold cooked rice
1/2 teaspoon sugar
1 tablespoon soy sauce
salt to taste
Directions:
- Fry bacon and remove to drain on paper towel
- Cook green onions until softened in bacon fat
- Add eggs and scramble in pan
- Add rice, bacon, sugar, salt and soy sauce to pan
- Stir together with eggs and green onions
- Cook over medium heat, stirring occasionally until rice starts to brown lightly (approx 15-20 minutes)
