Recipe History: This was a Watson family recipe that I got from Jim's mom. It has become my favorite "fruit" salad. The marshmallows sweeten the salad as it sits.
Ingredients:
2 cups seedless purple grapes, cut in half
2 cups minature marshmallows
2 tablespoons pineapple joice
2 tablespoons Mayonnaise
6 ounces of cream cheese
large can of crushed pineapple, drained (save 2 tablespoons of juice)
1 small carton (1/2 piint) whipping cream
Directions:
- Combine mayonnaise, cream cheese, pineapple juice
- Beat on low speed with mixer until smooth
- Combine grapes, marshmallows and pineapple and mix together
- Add to cream cheese mixture
- Whip cream until stiff and fold into grape/cream cheese mixture evenly
- Chill overnight.
