Recipe History: This recipe was given to me by my friend Sue White. It's so easy!
Ingredients:
1 large or 2 medium lemons
4 eggs
1-1/2 cups sugar
1/3 cup softened real butter
1 tsp vanilla
1 unbaked pie crust
Directions:
- Wash lemon, cut off ends, remove seeds and cut up with the peel on into a blender.
- Blend until soupy.
- Add remaining ingredients and blend again.
- Pour into pie crust.
- Bake at 375 for 10 minutes, then reduce heat to 325 for another 45 minutes.
Tip: Top with whipped cream.
