Recipe History: This is one of Grandma Norma's healthy recipes
Ingredients:
2 eggs
3/4 cup dark brown sugar
1/2 cup walnuts, pecans or peanuts... (optional)
1 tblsp. vanilla
20-oz can fruit with liquid (pineapple, grapefruit, peaches, mandarin oranges...just about anything moist)
2 cups whole wheat flour
101/2 tsp. baking powder
1/2 tsp. baking soda
4 heaping tsps. cocoa
- Mix together eggs, brown sugar, nuts and vanilla
- Add canned fruit
- Blend dry ingredients - flour, baking powder, baking soda and cocoa
- Combine all ingredients together. Pour into a sprayed pan and bake 30 minutes. Keep covered in airtight container. Serve with Cool whip.
