Recipe History: I've made these Rice Krispie cookies at Christmas time since the girls were small. They are easy-to-make and involve cooking, not baking.
Ingredients:
1 1/2 cups dates, chopped
1 whole egg
1 cup sugar
1 stick margarine or butter (Smart Balance works)
3 cups Rice Krispies cereal
Powdered sugar or coconut
Directions:
- Combine dates, egg, sugar, and margarine in pan (double boiler works best)
- Bring to rolling boil over medium heat and cook until thick.
- Cool completely
- Add Rice Krispies to date mixture and blend well
- Form into small balls and roll in powdered sugar or coconut
- Store in covered container in refrigerator
Tip: When creating cookie ball, squeeze together to pack tightly before rolling in powdered sugar or coconut. It is a must to keep these cookies refrigerated.
