Recipe History: Mom used this recipe often. The cookies are unbaked because they are made in a large skillet on the stove!
Ingredients:
1/4 cup margarine
4 tblsps. cocoa
1/2 cup milk
2 cups sugar
1 tsp vanilla
2/3 cup peanut butter
3 cups quick oats
Directions:
- In a large heavy skillet, melt butter, add cocoa, and mix well.
- Add milk and sugar, mix well.
- Bring to a rolling boil.
- Remove from heat.
- Add vanilla and peanut butter, blending well.
- Finally add the quick oats, mixing well.
- Drop by spoonfuls on waxed paper to set until hard.
- Batch equals 3960 calories; 66 calories per cookie.
Variation with coconut:
Ingredients:
1/2 cup (1 cube) margarine
6 tblsps cocoa
1/2 cup milk
2 cups sugar
1 tsp vanilla
1 cup coconut
3 cups quick oats
Nuts (optional)
Directions
- In a large heavy skillet, melt butter, add cocoa, and mix well.
- Add milk and sugar, mix well.
- Bring to a rolling boil.
- Remove from heat.
- Add vanilla, coconut and nuts, blending well.
- Finally add the quick oats, mixing well.
- Drop by spoonfuls on waxed paper to set until hard.
Tip: Store in a tightly closed plastic container. Will keep for 2 weeks.
Shannon asked for these cookies for her birthday and I couldn't find the recipe. I found one online, but they didn't come out as good as Mom's. :( I'm so glad you put this on here Joy!
