Recipe History: Longtime favorite of mine. Got this recipe when married to Jim. As good as the carrot cake you'd get served at an upscale restaurant!
Ingredients:
Cake:
2 cups flour
2 teaspoons baking powder
1 1/2 teaspons baking soda
2 teaspoons cinnamon
1/2 teaspoons salt
2 cups sugar
4 eggs1 1/2 cups vegetable oil
1 cup grated carrots
Small can crushed pineaple
1/2 cup nuts
Icing:
1 box powder sugar
1/2 stick margarine
1/2 stick butter
1 - 8 ounce pkg cream cheese
1 teaspoon vanilla
Directions:
Cake:
- Mix together dry ingredients
- Add the rest of the ingredients
- Bake at 350 for 35 to 40 minutes
- Cool completely before frosting
- (Makes 3 round tiers or 2 oblong pans)
Icing
- Cream all ingredients together until smooth
Tips: The best part is the cream cheese frosting...don't skimp!
