Chili Rellenos Casserole

Recipe History: Got this recipe on a Realtor's flyer and made it for a Cinco deMayo party.  It was a big hit!

Ingredients:
1 lb. ground beef
1/2 cup chopped onion
2 - 4ounce cans whole green chilies
6 ounces grated cheddar cheese
1 1/2 cups milk
1/4 cup flour
1/2 teas. salt
1/4 teas. pepper
4 large eggs, beaten
Salsa to taste

Directions:
  • Brown beef and onions and drain off fat.
  • Sprinkle meat with salt and pepper.
  • Cut green chilies in half, open and remove any seeds.
  • Layer half of the green chilies in a 10x6 baking dishe.
  • Sprinkle with cheese, then top with meat mixture.
  • Arrange remaining green chilies over meat. 
  • Combine remaining ingredients, beating until smooth.
  • Pour over meat-chile mixture.
  • Bake at 350 degrees for 45-50 minutes, until knife inserted in center comes out clean.
  • Let cool 5 minutes and serve.
