Recipe History: Got this recipe on a Realtor's flyer and made it for a Cinco deMayo party. It was a big hit!
Ingredients:
1 lb. ground beef
1/2 cup chopped onion
2 - 4ounce cans whole green chilies
6 ounces grated cheddar cheese
1 1/2 cups milk
1/4 cup flour
1/2 teas. salt
1/4 teas. pepper
4 large eggs, beaten
Salsa to taste
Directions:
- Brown beef and onions and drain off fat.
- Sprinkle meat with salt and pepper.
- Cut green chilies in half, open and remove any seeds.
- Layer half of the green chilies in a 10x6 baking dishe.
- Sprinkle with cheese, then top with meat mixture.
- Arrange remaining green chilies over meat.
- Combine remaining ingredients, beating until smooth.
- Pour over meat-chile mixture.
- Bake at 350 degrees for 45-50 minutes, until knife inserted in center comes out clean.
- Let cool 5 minutes and serve.
