Healthy Snack Mix

Recipe History: Developed this snack once I hit the maintenance level of my diet.  Trying to eat from the lower end of the glycemic index and this has a lot of fiber and is low sugar.

Ingredients:
1 tbls Smart Balance
1/2 cup Maple Grove Farms Sugar-free Maple Flavor Syrup
1 1/2 cups frosted mini wheats
4 T Splenda granular
3/4 cups old fashioned oats
2 cups puffed wheat (unsweetened) cereal
2 cups Barbara's Puffins Cinnamon cereal
2 cups Kashi Go Lean cereal
1/2 cup raisins
1/2 cup craisins
1 cups peanuts
1 T Flaxseed (Milled)

Directions:
  • Melt Smart Balance in 9x13 cake pan
  • Add Maple Syrup to pan and stir
  • Add cereal, oats and nuts and stir until coated
  • Sprinkle Splenda, Cinnamon and Flaxseed over mixture and stir again
  • Bake in 300 degree oven for 25 minutes, stirring a few times.
  • Add raisins and craisins to mixture and cook an additional 10-15 minutes.
  • Turn off oven and leave pan inside for 15 more minutes
  • Remove from oven, cover lightly with aluminum foil and allow to cool. The mixture will harden once cooled
  • Once completely cool, store in airtight container.
Tip: You don't add the raisins or craisins in the beginning of the baking to prevent them from burning.  The mixture will seem soft when you first remove from the oven, but will crisp up after the mixture cools.
