Recipe History: Developed this snack once I hit the maintenance level of my diet. Trying to eat from the lower end of the glycemic index and this has a lot of fiber and is low sugar.
Ingredients:
1 tbls Smart Balance
1/2 cup Maple Grove Farms Sugar-free Maple Flavor Syrup
1 1/2 cups frosted mini wheats
4 T Splenda granular
3/4 cups old fashioned oats
2 cups puffed wheat (unsweetened) cereal
2 cups Barbara's Puffins Cinnamon cereal
2 cups Kashi Go Lean cereal
1/2 cup raisins
1/2 cup craisins
1 cups peanuts
1 T Flaxseed (Milled)
Directions:
- Melt Smart Balance in 9x13 cake pan
- Add Maple Syrup to pan and stir
- Add cereal, oats and nuts and stir until coated
- Sprinkle Splenda, Cinnamon and Flaxseed over mixture and stir again
- Bake in 300 degree oven for 25 minutes, stirring a few times.
- Add raisins and craisins to mixture and cook an additional 10-15 minutes.
- Turn off oven and leave pan inside for 15 more minutes
- Remove from oven, cover lightly with aluminum foil and allow to cool. The mixture will harden once cooled
- Once completely cool, store in airtight container.
