Recipe History:
I adapted this from a Weight Watchers recipe. Only 161 calories per tostada!
Ingredients:
4 corn tortillas
1 8-oz can asparagus
1 tsp lemon juice
1/4 cup chopped onion
2 tblsps lite mayonnaise
1/4 tsp chili powder
1/2 tsp salt (lite salt)
shredded lettuce
2 oz grated lite cheese
Directions:
Bake corn tortillas in a preheated 450 oven for 8-10 minutes. Watch closely until golden.
Blend asparagus, lemon juice, onion, mayo, chili powder and salt in electric blender until smooth.
Place 1/4 cup mixture on each baked tortilla, then shredded lettuce, and top with 1/2 oz grated cheese.
