Recipe History:
I've always loved taco salads. I tasted my first taco salad at Disneyland, and adapted those I tried into my own recipe.
Ingredients:
1 large flour tortilla
3 oz cooked ground beef or chicken
Kidney beans, drained and rinsed
Ripe black olives, sliced
Green onion, chopped, including green tips
Avocado, diced (optional)
Shredded lettuce
Grated longhorn or cheddar cheese
Tortilla chips (baked in the oven or Doritos)
Directions:
Place flour tortilla in a microwave-safe large bowl. Puncture tortilla in a few spots with knife.
Microwave for approximately 2-1/2 minutes on High. Watch closely so it doesn't burn but gets crispy.
In flour tortilla, add remaining ingredients and toss lightly, then circle edges of bowl with tortilla chips, or crumple a few chips into the salad mix. Top with sour cream and salsa.
