Recipe History:
When someone in our family shot a deer, I found this recipe to make delicious summer sausage. It can be used as a snack, an appetizer, and even atop a homemade pizza!
Ingredients:
2 lbs ground beef (or 1 lb each ground beef and deer hamburger), mixed well
1 tblsp brown sugar
2 tblsps curing salt (Morton's Tender Quick)
1/2 tsp onion salt
1/2 tsp garlic salt
1/2 tsp peppercorns
1/2 tsp mustard seed
1/4 tsp sage (optional)
1/4 tsp marjorum (optional)
Directions:
Mix all ingredients together thoroughly.
Divide meat mixture in one-half for 2 rolls
Roll each tightly in foil, twisting ends
Ripen in refrigerator for 24 hours.
Bake in preheated 350 oven for 1 hour.
Unwrap and drain. Cool.
Rewrap and let set in refrigerator for another 24 hours before slicing.
