Seven Layer Salad

Recipe History:

This salad has been on our table at every holiday for the past 20 years. My sister got the recipe and we were intrigued by the instructions. The advice she was given is that you must let it sit for a few hours BEFORE you stir it. It really does work! The mayonnaise layer on top acts as a seal. Make sure there are no "holes" in the top layer so the flavors can't escape. Give it a try - I think you'll love it!

Ingredients: 
1 head iceberg lettuce
1 large purple onion 
1 head cauliflower 
1 can LeSuer Early Peas
1 jar REAL Bacon Bits 
1/2 jar mayonnaise 
1/2 to 1 cup grated Parmesan cheese.

Directions: 
Use large cylindrical container with airtight lid. Layer ingredients in this order:
  1. LETTUCE - cut or break into bite-size pieces and place in bottom of container;
  2. PURPLE ONION - chop onion into small/medium chunks and place on top of lettuce;
  3. CAULIFLOWER - cut or break cauliflower into bite-size pieces & flowerettes and place on top of onion;
  4. LeSuer PEAS - drain well and layer on top of cauliflower;
  5. BACON BITS - sprinkle over peas;
  6. MAYONNAISE - spread generously over salad and spread to sides of container, making sure mayonnaise completely covers salad (no holes in this layer);
  7. PARMESAN CHEESE - sprinkle 1/2 to 1 cup Parmesan cheese over mayonnaise layer. 
  • Cover salad with airtight lid and refrigerate for several hours or overnight - DO NOT STIR.
  • KEEP REFRIGERATED until you are ready to serve.
  • Mix well to combine ingredients before serving.
